Ingredients

For the Soup:

1 lb (450g) boneless chicken breast or thighs, cubed

8 oz (225g) lasagna noodles, broken into pieces

1 medium onion, diced

4 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups low-sodium chicken broth

1 cup water

2 tbsp olive oil

1 tsp Italian seasoning

½ tsp chili flakes (optional)

1 tsp sugar

Salt and black pepper to taste

For the Cheesy Finish:

½ cup heavy cream (or milk for lighter version)

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Fresh parsley or basil, for garnish

Step 1 – Sauté the Aromatics

Heat olive oil in a large pot over medium heat. Add diced onion and cook for 4–5 minutes until soft and translucent. Add garlic and cook for 30 seconds more.

Step 2 – Cook the Chicken

Add the cubed chicken to the pot. Season with salt, pepper, and Italian seasoning. Cook until no longer pink, about 5–6 minutes.
